Pascale’s Squash Soup

About the Recipe

Ingredients

  • 1 Red Kuri Squash or a potimarron squash (chopped; leave skin on)

  • or a butternut squash (chopped and peeled)

  • 1 cup Whole large Onion; chopped

  • 1 cup Whole apple; peeled and chopped

  • 2 oz Fresh thyme springs

  • 1 can Coconut milk; full fat

  • 1 Tbsp Smoked paprika

  • 1 tsp Creole spice

  • Salt and pepper to taste

Preparation

Step 1


Place squash, Apple, onion, and thyme (with stem still attached) in a slow cooker and cook on high for 4hrs until all vegetables are soft and tender.

(Alternatively, this can also be cooked in a pressure cooker on high pressure for 25mins.)



Step 2


When you can easily pierce the squash with a fork, remove the stems from the thyme and discard them.



Step 3


Transfer all ingredients to a blender and blend until smooth.



Step 4


Stir in spices and coconut milk until till well mixed. Add salt and pepper to taste.



Step 5


Serve.
